Christmas Goodies Recipes


I typed out all my favorite Christmas goodies so I could see them all in one place, so I thought I would share the recipes. I didn't get to the English toffee this year, but it is a Christmas favorite. Maybe I should make it for Valentine's day?

Holley’s Favorite Christmas Goodies

Candy making tips: melt chocolate in microwave 30 seconds at a time. Stir, then repeat. Also whenever possible use chocolate made for baking. Chocolate chips can be used as a last resort! Add grated parafin (wax) to chocolate to help with hardening.


Layered Mint Chocolate Fudge
2 c. (12 oz.) chocolate chips
1 can sweetened & condensed milk
2 tsp. vanilla
1 c. (6 oz.) white confectioners baking pieces
2 tsp. peppermint extract
1 drop green food coloring

Melt chocolate chips and 1 cup of sweet/cond milk. Then stir in vanilla. Spread ½ mixture in 9” square pan lined with wax paper. Chill 10 minutes in freezer. In heavy pan over low heat put rest of sweet/cond milk and white chocolate. Melt, and then add flavoring and coloring. Spread on top of dark chocolate. Chill 10 minutes. Then add rest of dark chocolate and chill 2 hours.

Holley’s Favorite Marshmallow Fudge
1 bag chocolate chips (2 cups)
1 bag butterscotch chips (2 cups)
1 cup peanut butter

Melt and mix in the microwave. Then add:

½ bag mini marshmallows
4.5 oz bag blanched sliced almonds

Pour into 9x13 pan. Refrigerate.

Buck Eye Balls
1 ½ cup creamy peanut butter (or crunchy)
½ cup butter, room temp
1 tsp. vanilla
1 16 oz. bag powder sugar (3 ½ cups)

2 cups chocolate chips/melts
2 tbsp. grated paraffin

Mix top ingredients. If too dry add a little milk, form into balls, and refrigerate to harden. Then dip into chocolate with dipping fork.

Peppermint Bark
2 cups white baking chocolate
½ cup peppermint candy, crushed

Melt, mix, and pour onto pan with wax paper.
Optional: Melt 2 c. bittersweet chocolate, pour first, freeze 10 min, then pour mixture on top.

Scotch-a-roos
1 cup karo syrup
1 cup sugar
1 cup of peanut butter
6 cups rice krispies

Bring karo syrup and sugar to a boil, stirring constantly. Turn off heat then add peanut butter. Stir until peanut butter melts, then pour mixture over rice krispies.

Melt and spread on top:
1 cup butterscotch
1 cup chocolate

Caramel Corn

5 qts. Popcorn
1 c. butter
Pinch cream of tarter
2 c. brown sugar
½ c. karo syrup
1 tsp. soda

Boil butter, cram of tarter, brown sugar, and karo syrup for 5 minutes. Remove and stir in soda. Pour over popcorn in large roaster. Stir to cover corn. Bake 225 degrees for 40 minutes.

Optional: add food coloring for holiday cheer!


English Toffee
Toast almonds, 300 degrees 15-20 minutes
1 cup Slivered almonds
1 tsp. melted butter

Boil until golden:
2 cups butter
3 tbsp + 1 tsp water
2 cups sugar

Remove from heat and add:
2 tsp. vanilla
1 cup toasted almonds

Pour onto greased sheet, let cool and spread with:
16 oz. chocolate, melted

Top with:
1 cup chopped pecans
